Basted with a savory tamarind glaze, Chef Clifford Pleau makes clever use of exotic spices to evoke layers of flavor and lend a decadent note to this grilled favorite. Working with summer’s bounty, Chef Pleau also weaves fresh contrast into grilled dishes, combining the spicy crispness of wild organic arugula with sweet grilled golden beets or the zest of lemon grass with grilled pineapple and salmon.

The key to great tasting eggplant is in the preparation. Chef Pleau suggests cutting it into 1" – 2" thick sections and soaking them in salted water for 10 minutes. Drain and pat dry. This takes out the bitter edge eggplant tends to have. More importantly, when it comes time for grilling, the eggplant will have absorbed a bit of water so you’ll be able to use less oil.
